Eat now: Giovane Bacaro’s amberjack crudo

While the Fairmont Pacific Rim’s lobby lounge and botanist concepts may command attention when it comes to food and drink at Vancouver’s downtown luxury hotel, its newest addition, Giovane Bacaro, has become a staple for locals and tourists alike since it opened in June. 2021.

Think of this Venetian-style bar as an Italian version of a Spanish tapas bar. Under the skilful hand of Executive Chef Scott Korzack, the menu offers a range of ready-to-serve snacks (like fried herb chips or whipped salt cod over grilled polenta), small dishes and prepared-to-eat meals. – homemade pasta to dip into while enjoying vermouth, wine, Negronis (obviously) and more.

The amberjack crudo is remarkable and a perfect dish to remember this spring is in the air, even if the weather doesn’t always cooperate. Thin slices of fish in beautiful pink and white hues are served with saffron-marinated carrots, split cerignola olives and pistachios as well as fresh parsley and chervil.
